This changes from time to time and it really depends on my mood…
Currently, I’d say my favorite thing to cook is this recipe I came across on TikTok recently. They didn’t give it a name, but I just call it a Crockpot Chicken Pasta Melt. It’s delicious and, for a single person like me, I can pretty much eat that stuff all week.
You start with two or three chicken breasts in the crockpot, depending on the size of the chicken pieces. Then you pour in an entire jar of marinara sauce. Followed by an entire jar of alfredo sauce. Unless you make your own sauces… that’s more complicated. I don’t do complicated…
I throw in a bunch of seasonings without really measuring: salt, pepper, Italian seasoning, oregano, garlic powder, onion powder, and some actual minced garlic if I have it.
Once all these things are in the crockpot with the chicken, I stir things up and make sure the chicken is fully coated with the sauces and seasonings mixture. Turn on the crockpot and let it cook on low for 6-7 hours.
When you come back later, you’re gonna want to shred that chicken. I like using a hand mixer to shred mine because it’s quicker and easier than the two forks method. It can get a little messy with the sauce being saucy and all… but that’s easily cleaned up.
While you’re shredding your chicken, it’s a good idea to go ahead and boil your pasta. The guy in the video I watched used bowtie pasta. I prefer penne… I don’t think it really matters what you use. As long as you boil an entire 12 ounce box of whatever shape pasta you prefer. Oh, but don’t get it all completely tender. I believe they call it “al dente” in the business. You don’t want it to be too tender because you’re going to add it to the crockpot once its drained and it’ll cook for another 15 minutes or so in there.
Once you’ve poured in your pasta, add a cup of mozzarella cheese and mix it all up with the sauce and shredded chicken. Put the lid back on and let it sit for another 15 minutes, as I mentioned before.
When your 15 minutes of fame have expired, dish it out in a good sized bowl and, if you’ve got it, sprinkle some more mozzarella or parmesan cheese on top to give it a little extra cheesiness.
Some other foods that make the favorites rotation include, but are not limited to: Crockpot Crack Chicken; Pizza; Breakfast Casserole; Oatmeal Cookies; Chicken and Dumplings… That might be all I can think of at the moment…
